This Sri Lankan dish tastes heavenly. It's sweet, spicy, and very aromatic at the same time. I haven’t cooked anything like this before. Although the list of ingredients seems to be quite long, the recipe is very easy. Adding cardamom and cinnamon in the hot oil gives the dish a very interesting and intense flavour. Remember to taste the dish during cooking, before you add more chiles. I only added three hot red chiles as it was spicy enough for my taste.
It was another improvisation in the kitchen. I felt like cooking something with olives. I just used what I had in the kitchen: some vegetable and pasta. I also added vegan mince as I had never tried it before and I was curious about it. On the next day I used the sauce to make delicious tortilla wraps.
I didn't know roasted almonds are so delicious! They taste great in combination with rice and vegetables. This dish is incredibly easy to cook. You don't even need seasonings or herbs as soya sauce gives it a characteristic flavour and is salty as well.
When my friend cooked the courgette curry for me, I simply fell in love with this dish. It can be spicy when you add more chili peppers, or it can be mild when you add less. The main purpose of my trip to Bristol was to try Italian dishes cooked by Francesco. His friend, Alex, also made his contribution to the meal. What they prepared was just great. Lazanki is a dish made of square pasta and sour cabbage. It usually is mixed with meat (e.g. bacon, sausage). My vegan version contains: eggless pasta, mushrooms, onion, sauerkraut, marjoram, salt and pepper. It's very easy and quick if you get your pasta from a shop, instead of making it yourself.
This is a very simple and delightfully tasty stir-fry. I cooked it with sesame oil to impart a subtle oriental aroma to the dish. It turned out great. It’s light, colourful, crispy and a bit warming. Just a perfect dish for a gray rainy day and as everyone knows, there are plenty of days like this in the UK.

This dish is made mainly with green vegetables. If you don’t like any of the ingredients, replace it with something else. I’m sure it will still be delicious.
Any type of noodles can be used. If you prefer cream soup to sauce, you can cook it by simply adding some water.
I adore pasta + sauce kind of dish. It’s really easy to cook and usually also quick. This sauce is very delicate. Thyme makes it aromatic and fresh. This is exactly what I wanted to achieve: creamy but not stodgy pasta sauce made of vegetables and herbs.

I found a recipe for vegan version of pierogi ruskie. I wondered what they would be like. In this recipe there is tofu instead of cottage cheese. Vegan pierogies are just as superb as the classic ones.
Pierogies are small dumplings popular in Eastern Europe as well as in some other countries of the world. The dough is very easy to prepare – it’s just a combination of flour and water. Making pierogies is a time-consuming activity. Each dumpling has to be formed and filled separately. It might seem to be difficult at the beginning but practice makes the master!
