I adore pasta + sauce kind of dish. It’s really easy to cook and usually also quick. This sauce is very delicate. Thyme makes it aromatic and fresh. This is exactly what I wanted to achieve: creamy but not stodgy pasta sauce made of vegetables and herbs.
You need:
200g wholewheat penne, cooked
400g mushrooms, sliced and cooked
1 medium cauliflower, finely chopped and cooked
20g fresh thyme, chopped
250g oat cream
salt and pepper to taste
1. Add cream to mushrooms and cook.
2. Mush cauliflower a little and mix with mushrooms.
3. Add thyme, salt and pepper. Keep cooking and let the water evaporate.
4. Mix sauce with pasta.
5. Serve with spring onion.
