When my friend cooked the courgette curry for me, I simply fell in love with this dish. It can be spicy when you add more chili peppers, or it can be mild when you add less. It's an important ingredient of the dish as its freshness harmonizes perfectly with the spiciness of chili peppers. I hadn't been a corriander lover before I tried the curry but now I think it's irreplaceable, at least in this recipe.

The main purpose of my trip to Bristol was to try Italian dishes cooked by Francesco. His friend, Alex, also made his contribution to the meal. What they prepared was just great. First we had bruschetta – grilled bread rubbed with garlic and topped with chopped tomatoes, coriander and olive oil. The main dish was eggplant parmigiana – baked eggplants with tomato sauce and vegan cheese.
A few weeks ago I hosted a coachsurfer from Italy who lives in Bristol. Francesco spent one night at my place that was the great time. He invited me to his city where I went for two days. Francesco was an amazing host. He showed me the city and cooked delicious vegan dinner. We spent the evening playing board games with his adorable friends.
Do you remember oat cookies? I used the recipe to prepare oat flapjacks. Bars like this are a great snack that you can always take with you and eat whenever you feel peckish. They are very easy, quick, healthy and cheap.
To avoid searching for vegan places in town when you're doing your shopping, eat one of the delicious flapjacks made at home. I used to consider baking to be a really hard task, especially when you don’t use eggs. But it’s not so hard. It’s fun. Of course sometimes a recipe doesn’t come out well. But then I try again to make it better. This cake isn’t perfect but I know what I did wrong so I will improve it next time. Zebra cake looks great and it’s made of simple sponge. Remember not to cut it until it cools down.
