Summer is the best season for pierogies. They can be filled with fresh fruit that are available everywhere in reasonable prices. You can fill your pierogies with one kind of fruit or mix two or more kinds - they are always delicious. Don't worry if you can't eat all of them. Put the pierogies in a freezer and cook them later.
Yesterday was such a lovely day, the ideal day for cooking delicious food, taking beautiful photos, and getting vitamin D from the sunlight. In the morning I bought my favourite seasonal fruit and other ingredients and went home to prepare yummy things. One of them was these delightful apple drop scones. They are great for dinner or dessert, both hot and cold. You can serve them with some fruit or maple syrup. I love them with just icing sugar on top.

Cauliflower in a member of the cabbage family, which also includes broccoli, Brussels sprouts, cabbage, and kale. It’s usually white but you can also find orange or purple varieties. Cauliflower is an excellent source of vitamin C and a good source of manganese, vitamin K, fibre, omega-3 fatty acids, and potassium. This vegetable is very low in calories, provides anti-inflammatory support, benefits the cardiovascular system. It is important for the digestive system as it helps to protect the lining of the stomach and helps in resisting the growth of Helicobacter pylori bacteria. The regular intake of cauliflower ensures healthy blood circulation, helps to maintain the blood vessels, reduces the risk of diabetes. It also protects the body from free radical damage, protects from cancer and helps the body in detoxification.
Green beans, also known as string beans or snap beans, are a good source of many nutrients, among them folate, fibre, vitamin K and vitamin C. This crunchy green vegetable is fat-free, low in calories and rich in antioxidants. Green beans maintain the health of bones, provide cardiovascular benefits, lower the blood pressure, help in lowering cholesterol levels, strengthen the immune system, and protect from cancer.
Carrot is a queen of root vegetables. Along with celeriac, swede, parsnip, sweet potato, beetroot and radish, carrot protects us from cancer. This orange root is an excellent source of beta carotene – an antioxidant and a precursor to vitamin A. Carrots improve eyesight, regulate blood sugar, benefit the skin, prevent heart diseases, maintain good digestive health, and boost the immune system. Carrots are rich in vitamins K and C, fibre, potassium, and they are low in calories.
Sweet potatoes with sweet chili sauce - that sounds like a lot of sweetness. Indeed, the dish is very sweet. But it's also very aromatic thanks to sesame seeds while green coriander gives freshness. Chili sauce makes the taste even more interesting and rich. I love this dish for its intesity. It also looks great. The chili sauce should be clearer but this time I added a little bit too much cornflour. Next time I'll add only as much as the recipe says and I hope you'll do the same thing.
This is a dish I love to have on hot summer days as dinner or dessert. The mix of creamed coconut and strawberries is simply delightful. I like a rich texture of the sauce. In my opinion is so much better than non-veegan version of the dish in which sour cream is used instead of the coconut. It's super easy and extra quick. It takes just a couple of minutes to have it done.
I was curious about this recipe as I have never combined spinach and broccoli in one dish. In the "World Vegetarian" cooking book I read that these two vegetables taste like an "as-yet-unknown" third one. The taste of the dish is indeed very interesting. According to the book, it can be served with any South Asian or Western meal or on toast. I served it with couscous. It was a nutritious and light lunch.
I'm impressed with this Indian dish. It's amazingly tasty and also very easy to cook. There are a few flavours that merge and complement each other. I like the combination of soft spinach and crunchy corn as well as the colours of the ingredients mixed together.
This is an exquisite dessert or dinner if you like sweet dishes. Cooking takes less than half an hour and no previous preparation is required. So if you have some rice and nuts or fruit, but you don't feel like spending much time in your kitchen, you will like this recipe for sure.
