Yesterday was such a lovely day, the ideal day for cooking delicious food, taking beautiful photos, and getting vitamin D from the sunlight. In the morning I bought my favourite seasonal fruit and other ingredients and went home to prepare yummy things.
One of them was these delightful apple drop scones. They are great for dinner or dessert, both hot and cold. You can serve them with some fruit or maple syrup. I love them with just icing sugar on top. For my cakes I usually prepare simple sponge and concoct my own cream. The sort of the cream depends on my whims or on the ingredients I have.
Once, when I was doing some shopping in the corner grocery, I saw a mouth-watering cake with a lot of cream and coconut on top. If I wasn't vegan, I would have bought it instantly. I went back home and cooked it myself instead. This is how I made it. This is a dish I love to have on hot summer days as dinner or dessert. The mix of creamed coconut and strawberries is simply delightful. I like a rich texture of the sauce. In my opinion is so much better than non-veegan version of the dish in which sour cream is used instead of the coconut.

Using this recipe for muffins and adding your favourite ingredients, you can create various types of cupcakes both very easily and quickly. Just remember to add mashed bananas (as a replacement for eggs). They will make your muffins fluffy and moist.

To avoid searching for vegan places in town when you're doing your shopping, eat one of the delicious flapjacks made at home. I used to consider baking to be a really hard task, especially when you don’t use eggs. But it’s not so hard. It’s fun. Of course sometimes a recipe doesn’t come out well. But then I try again to make it better. This cake isn’t perfect but I know what I did wrong so I will improve it next time. Zebra cake looks great and it’s made of simple sponge. Remember not to cut it until it cools down.
This was the first birthday cake I have ever made. Although the recipe hadn’t seemed to be difficult, I had some little problems. I overcame them and made the cake look and taste very well.
