This is a dish I love to have on hot summer days as dinner or dessert. The mix of creamed coconut and strawberries is simply delightful. I like a rich texture of the sauce. In my opinion is so much better than non-veegan version of the dish in which sour cream is used instead of the coconut.
It's super easy and extra quick. It takes just a couple of minutes to have it done.

You need:
400g strawberries
200g creamed coconut
1 cup rice, washed and cooked
2 tablespoons sugar
0,5 hot water
Method:
1. Rub the creamed coconut into the bowl with your fingertips. Add 0,5 cup hot water and dissolve the coconut. Add more water if needed.
2. Wash the strawberries and remove green tops from each of them. Cut into halves or quarters, depending on their size.
3. Put strawberries, sugar and coconut + water mixture in a food processor. Blend until smooth.
4. Serve with hot rice.
