One of them was these delightful apple drop scones. They are great for dinner or dessert, both hot and cold. You can serve them with some fruit or maple syrup. I love them with just icing sugar on top.
2 cups plain flour
1,5 cup plant milk
0,5 cup water
1 teaspoon baking powder
oil for frying
3-4 medium apples, peeled and sliced or grated
1. In a bowl mix the flour, milk and baking powder. Mix in enough water to make a thick batter. (If you grated the apples, add them in the batter and mix well.)
2. Drop 2 spoonfuls of the mixture on a moderately hot, well-greased frying pan. Cook 2 or 3 at a time. (If you sliced the apples, add 2 slices on top of the first spoonful of the mixture and then drop another one.)
3. Cook for about 2-3 minutes, until the underside is brownish. Turn and cook until the other side is brownish as well.
4. Top with icing sugar. Serve hot or cold.
