Kissel is a dessert made of fruit and thicken with potato flour or cornstarch. It can be served hot or cold. You can eat it on its own or along with pancakes or ice cream. Popular flavours are: strawberry, cranberry, gooseberry, cherry, lemon, orange, apple, and peach. Kissel looks similar to compote but it's much thicker.

You need:
400g strawberries, chopped
3 cups cold water
1 teaspoon vanilla powder
2-3 tablespoons sugar
2-3 tablespoons potato flour
Method:
1. Place the strawberries, vanilla, and sugar in a pot and pour in 2,5 cup water. Bring to the boil and cook for 2 minutes.
2. Combine the remaining water with potato flour. Mix with the strawberries and stir. Bring to the boil. Cook for about 10 minutes over low heat.
3. Put the kissel aside and wait until it cools down. If it's not thick enough, add a little bit of potato flour mixed with cold water and bring to the boil again.
4. Serve warm or cold.
