I used to dislike hummus but I really don't know why. This Middle Eastern paste is absolutely delectable. I love it with bread for breakfast, with carrot as a snack or with falafel for dinner. You can get it in any supermarket but you can easily make it at home. Just blend cooked chickpeas with tahini and your favourite herbs and vegetables.
What you need:
1 cup dry chickpea (soaked over night before cooking)
100g tahini*
2 garlic cloves, crushed
1/2 lemon juice
1 handful fresh coriander
sesame oil
salt to taste
*to make your tahini, roast a cup of sesame seeds on a frying pan; when it cools off, blend it with 1/4 cup vegetable oil
1. Cook chickpea until soft (for about 2 hours). Drain off. Place in processor.
2. Add all the ingredients and blend until smooth, add more oil or cold water if needed.
3. Serve with vegetables or bread or whatever you like :)
