To be honest, I didn't believe you can prepare a nice vegan mayo at home as well. I was completely surprised when I tried this mayo. It tastes exactly like a traditional one but it's slightly thinner.
0,5 cup unsweetened soya milk
1 tablespoon apple vinegar
1 teaspoon mustard
0,5 cup vegetable oil
salt and pepper to taste
1-2 tablespoons yeast flakes (optional)
1. Place the milk and vinegar in a blender and blend for 2-3 minutes.
2. Add the mustard, yeast flakes, salt and pepper. Blend for a few minutes.
3. Add the oil gradually (during blending) until the consistency is thick enough. Blend for 2 more minutes.
4. Transfer the mayo to a jar or tight food container and keep in the fridge.
