Samosas is my favourite food nowadays. This Indian snack is extremely filling so I usually have it for my dinner or lunch. When I have time, I cook it at home. I can easily get it from an Indian restaurant for next to nothing and don't bother myself with preparing the dough and the filling. There are a few methods of preparing them and I'm sure you'll find your own. |
Dough:
1,5 cups plain flour
0,5 cup water
2 tablespoons oil
a pinch of salt
1. Mix all the ingredients in a bowl.
2. Knead for 3-4 minutes.
3. Leave it to rest.
4. Roll up the dough and fill the samosas with your favourite filling. (Search the Internet for the way of making samosas that suits you best)
Potato filling:
300g potatoes, peeled, cooked and mashed
0,5 onion, finely chopped
30-40g green peas
1-2 chillis, chopped
1 teaspoon garlic paste
0,5 teaspoon ginger paste
2 teaspoons mixed spice (garam masala, curry, paprika, mustard seeds, coriander seeds...)
2 tablespoons fresh coriander, chopped
Combine all the ingredients in a bowl and mix.
Cauliflower filling:
1 medium cauliflower, divided into florets
2 chili peppers
2-3cm piece ginger, peeled
3-4 garlic cloves
1 medium onion
2-3 tablespoons olive oil
1 teaspoon curry powder
1 teaspoon turmeric
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1. Chop the cauliflower very finely or use a food processor. Put aside.
2. Chop the onion, garlic, and ginger very finely or use the food processor again. Mix into the cauliflower.
3. Heat the oil in a frying pan. When very hot, add all the seeds. Fry for 30 seconds stirring constantly. Add the rest of the spices, stir few more times. Mix into the vegetables.
When your samosas are stuffed, you can:
1) deep-fry them in 180°C for about 6 minutes,
2) shallow fry them for 3 minutes each side,
3) bake them in 200°C for about 30 minutes.
