This is a very healthy cake that you can have for your breakfast or lunch. It's more nourishing than any other cake I have ever baked. The combination of plums, chocolate, buckwheat groats, barley flakes and spices is just wonderful. The cake has a rich texture and flavour thanks to many different ingredients. It takes some time to prepare it but it's not difficult at all. |
You need:
for the dark layer:
200g buckwheat groats
2 tablespoons vanillin sugar
2 tablespoons sugar
100g plain flour
2 ripe bananas
0,5 cup plant milk
3 tablespoons coconut oil
3-4 tablespoons cocoa powder
40g powdered spices
0,5kg plums
for the white layer:
1 cup barley flakes
1 can coconut milk
0,5 cup water
1 ripe banana, mashed
3-4 tablespoons sugar
for the glaze:
1 bar dark chocolate
6-8 tablespoons plant milk
for the dark layer:

Method:
1. Cook the buckwheat groats according to package directions, add vanillin and normal sugar to the water. Put aside and leave to cool.
2. In a bowl combine the cooked groats, flour, bananas, milk, oil, cocoa powder, spices, and mix precisely. Place in a baking tray.
3. Remove stones and slice the plums. Place on the dark layer.
4. Cook the barley flakes according to package directions in coconut milk and water. Put aside and leave to cool.
5. In a bowl combine cooked flakes, banana, sugar, and mix. Place on top of the plums.
6. Bake for 45 minutes in 180°C.
7. When the cake is cool, melt the chocolate in the hot milk, and spread over the cake.
