I used to consider baking to be a really hard task, especially when you don’t use eggs. But it’s not so hard. It’s fun. Of course sometimes a recipe doesn’t come out well. But then I try again to make it better. This cake isn’t perfect but I know what I did wrong so I will improve it next time. Zebra cake looks great and it’s made of simple sponge. Remember not to cut it until it cools down.
You need:
2 cups flour
2 tablespoons cocoa powder
2/3 cup vegetable oil
7 tablespoons sugar
1 1/3 cup soya milk
2 teaspoons baking soda
1. In a bowl combine 1 cup flour, 1/3 cup vegetable oil, 2/3 cup milk, 3 tablespoons sugar and one teaspoon baking soda. Mix thoroughly with a hand mixer. Do the same in another bowl, adding 2 tablespoons cocoa powder and 4 tablespoons sugar.
2. Put two tablespoons* of the white mixture in the centre of the cake tin. Put two tablespoons of the cocoa mixture in the middle of the white one. Continue doing this until the mixtures are finished.
3. Bake for about 50 minutes in 180 degrees.
*I put one tablespoon of each mixture but I believe it’d look much better if put two instead.
