At first you need to prepare a few pancakes, then cook stuffing, make sauce and bake it all for a while. Thanks to herbs you add to the sauce the dish smells brilliant. It is also extremely filling.
8-10 pancakes
1 can of spinach
1 can of corn
400g mushrooms, chopped and cooked
1 cup red kidney beans, cooked
3 garlic cloves, crushed
3 medium tomatoes, peeled and chopped
½ glass water
fresh basil
herbs
1 tablespoon flour
oil
salt, pepper
Stuffing:
Combine spinach, corn, mushrooms, garlic and beans in a pot and cook. Add salt and pepper to taste.
Fill the pancakes with the stuffing and roll them.
Sauce:
Make roux by adding the flour into hot oil and mixing them together. Pour the water and tomatoes. Add herbs, basil, salt and pepper.
Place the rolls in a baking tray, pour the sauce over them.
Bake for 15 minutes in 180 degrees.
